Recipe: Cucumber Mint Popsicles

Mama got a new toy.

It's a Zuko.  No wait.  Zuko is the dastardly prince from Nickelodeon's Avatar whose face was burned while he was trying to impress his father in a heated (ha ha) fire bending battle.


By the end of this surprisingly deep animated series, we learn that Zuko's not evil.  He's just misunderstood and has something to prove!

Well, you what else is misunderstood and has something to prove?  My new toy, the Zoku!



The Zoku is an instant ice pop machine that prompted some online hater named samenvatting8 to write, "Great another thing in the kitchen that you use two times a year..."

Well, samenvatting8:

  1. You should have put a comma between "great" and "another."  
  2. I'll have you know that the Zoku is amazing and I will use it many, many times a year even if I have to borrow someone else's kids to do so!

First concoction....

Cucumber Mint Pops 

Chapter 1
1 cup water
1 cup sugar
1 oz mint leaves

Combine water and sugar in a pot over medium heat.
Stir until sugar sugar melts.
Remove from heat and stir in mint leaves.
Let syrup cool and infuse for 1 hour.
Remove leaves and pour syrup into a blender.

Chapter 2
1 cucumber, peeled, seeded, and chopped
½ cup water
Juice of 1 lime

Add cucumber, water, and lime juice to the syrup.
Blend until smooth.
Freeze in a bad ass Zoku for ten minute or the old fashioned way in the freezer for hours and hours and hours. Either way, you will love it.  Even you, samenvatting8.  Even you.
