Salad with Feta, Strawberries, and Tamari Almonds

You know when you see a recipe and you're all, "That recipe is so weird. That couldn't work...could it?" And then you try it and it DOES work! And it's pretty and you're proud of yourself so you serve it to your husband and he's all, "You know I don't like strawberries." And you're like, "Whaaaaa?"

You know what that's like? Really? Wow, that's EXACTLY what happened to me yesterday! What a coincidence!

Yes, it turns out there is a person on this planet who doesn't like strawberries and I married him. For the rest of us normal people, this odd sounding recipe from Food and Wine really does taste quite nice. The original calls for smoked almonds. However, I used tamari almonds and it was great. So great, even the KING enjoyed them1 Well, he enjoyed them while eating AROUND the berries...(grumble, grumble).

feta, strawberry, almond, mustard

Salad with Feta, Strawberries, and Almonds 

2 teaspoons Dijon mustard 
1 teaspoon honey
1 small shallot, minced
2 tablespoons red wine vinegar
1/3 cup extra-virgin olive oil
Freshly ground pepper
6 ounces spring mix
1 quart strawberries, hulled—small berries halved, large ones quartered
1 cup crumbled feta
1 cup tamari or smoked almonds, chopped 

In a small bowl, stir together the mustard, honey, shallot and vinegar. Stir in the olive oil and season with salt and pepper.

Put the lettuce in a large bowl. Add the strawberries, feta and almonds. Drizzle the dressing over the salad, toss well and serve.
