Last Days of Summer...

Friday is the official last day of summer and I'm kind of in denial. To mark this staid occasion, here's a recipe to use up the remaining couple of berries in the fridge. It makes an excellent accompaniment to coffee, tea, or tears. Sigh.

Mixed Summer Fruit Skillet Cake

Based on this recipe from DesignSponge.

½ cup sugar
¼ cup (½ stick) butter
grated zest of one lemon
2 eggs
1 teaspoon vanilla
1 cup flour
1 ½ teaspoon baking powder
1 pinch salt
2 cups diced summer fruit such as blackberries, peaches, plums, nectarines...
¼ teaspoon cinnamon
1 tablespoon brown sugar

Preheat oven to 350 degrees.
Cream the butter and the sugar.
Add the grated lemon zest.
Add the eggs and vanilla, stirring each to combine.
In a separate bowl combine the flour, salt, and baking powder.
Add the dry ingredients to the wet ingredients and stir to combine.
Pour the batter into a greased 10" non-stick, oven safe skilled.
Top with the fruit (I used one cup blackberries and one cup plums).
Combine brown sugar and cinnamon and sprinkle the mixture on top.
Bake for 30 minutes or until the top is browned.
